West Indian Macaroni Pie

Does anyone remember the speech I gave about macaroni pie in my Baked Mac and Cheese post. If you don’t, here’s a quick recap. Americans say Baked Mac and Cheese and people from the Caribbean say Macaroni Pie. The end. I made some macaroni pie. My way. And guess what? Out of everything else on his plate, the American ate allllll of his macaroni pie. HA! So I guess my macaroni pie is here to stay. Now for those who are wondering what’s the difference, well a macaroni pie (do not scoff at the name), is basically a dressed up baked mac and cheese. The one I’m sharing today is very simple and delicious and probably isn’t as scary as the name may sound to you.

Ingredients:
1 box of pasta, elbows or small shells
1 0r 2 eggs (I used one this time)
loads of white cheddar cheese
loads of yellow cheddar cheese
1 cup of whole milk
1/4 small onion, minced
1/4 green pepper, grated finely
1 tsp paprika
1/2 cup chicken stock or broth
1/2 stick butter
1/2 tbsp sugar (yes, sugar)
salt and ground pepper to taste
seasoned breadcrumbs for topping

Method:
1. Preheat oven to 350 degrees
2. Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
3. To the pot with drained pasta, add your butter, milk, chicken stock, sugar, onions, green pepper, paprika and cheese. Mix well then add eggs
4. Pour the macaroni mixture in a 8 inch square baking dish.

Cover macaroni with the cheese that was reserved for topping

Then sprinkle breadcrumbs over the top

Bake in a preheated oven (covered for about 30 minutes), then remove covering and continue to bake for another 30 minutes or until a knife inserted comes out clean (and the top is golden brown)

Serve it up and enjoy!

  6. I made your macaroni pie recipe for Thanksgiving dinner and my family loved it. Never heard it called ‘macaroni pie’, and my family background is in Trinidad and Grenada. Definitely keeping this one in my recipe box. Thank you for sharing!

    • My apologies for taking so long to respond. After you drain the pasta and then return it to the pot, add the butter. The noodles would be hot enough to melt the butter. Continue with the instructions after this.
